Best way to make a fast wine from concentrated grape juice and champagne yeast?
I brew a little beer, but I was wondering if anyone knows how to make a quick to drink wine from fruit juice concentrate and champagne/wine yeast. Some people say 1 week or so, and I know wine normally takes 1-3 months before it tastes smooth and similar to professional quality. I have all the beer equipment, but don’t want it sitting in the 2ndary forever.
Basically I want some idea how to do it while travelling, like when heading out to India and whatnot.
I figured that the champagne yeast would be done making the alcohol by day 5 if the temps were enough, any ideas on fining using isinglass or irish moss, etc? Fine it after day 5 then throw in a campden tablet?
You can’t make it in 1 week, no matter what you try.
1) The fermentation won’t have finished
2) There will be very little alcohol in it
